fink – Restaurant & Boutiquehotel Hotel 2023

Over 600 years old, the building housing the »fink« Restaurant & Suites is located within the arcades of one of Brixen’s oldest quarters. The extensive renovation works saw the building completely gutted and restored to its original appearance. The careful, sustainable reconstruction takes account of the former monastic splendour of the townhouse, paying homage to the architectural and cultural history of Brixen, a city steeped in religious tradition.

The focus during the planning and reconstruction of the hotel and its suites, spa and restaurant was firmly on showcasing the old stone walls, vaults and frescoes, emphasising their impact through the restrained interior design.

Only natural materials were used for the restoration, consistently laying the foundations for an ecologically sustainable establishment – from its day-to-day operations to the concept of a monastery kitchen, focused on plant-based local ingredients and promoting a holistic use of food.
